Breakfast Done Vegan !



Breakfast is my favorite meal of the day, when I am not rushing to get to work, I love to make me a breakfast that is filling, delicious and full of nutrients. My sweet potato has is a play off of my mothers "home fries " that she would make in the mornings. She would pair it with grits and salmon patties. I've transformed it to a vegan style breakfast and paired it with spinach, oranges and a slice of toast. Sometimes I add some Tofu Eggs !

Ingredients

  • 2 Sweet Potatoes

  • 1/2 White Onion

  • 1 Green Onion

  • 1/2 Red Pepper

  • 1/2 Green Pepper

  • Mushrooms *Optional*

  • Season salt, Turmeric, black pepper, garlic powder and onion powder

Preparation: 10 mins

Start by prepping your sweet potatoes . Place the sweet potatoes in the microwave for about 3-5 mins. You want your potatoes to be softened but not ready to eat . This will help you peel and cut the potatoes with ease.

Cut your veggies the way you like them along with your peppers.

Start with your potatoes in a cast iron pan that has been greased with olive oil. Let them brown for 3 mins and continue to mix them. Once they get some color place a lid on them with a splash of water so they can continue to soften for 4 mins. Take the lid off, add a teaspoon of olive oil and insert your veggies. Sauté and mix for another 5-7 minutes. Add your seasonings and take off the heat . Enjoy !
